Method

1.In a large bowl, combine mince, breadcrumbs, egg, spring onions, curry paste and fish sauce. Shape into four even-sized flattened patties. Chill for 20 minutes.
2.For the satay sauce: In a small microwaveable jug, combine peanut butter, sweet chilli sauce, water and soy sauce on high in 30-second bursts until smooth. Stir in peanuts and set aside.
3.In a large frying pan, heat oil on medium. Cook patties for 3-4 minutes each side until well browned and cooked through. Drain on a paper towel.
4.Top half of each roll with an even amount of lettuce leaves, a patty, tomato, carrot and sauce. Finish with roll top and serve with grilled lime.
  • Grill lime wedges, flesh side down, on a hot char-grill pan for 1-2 minutes until grill marks appear.
