Thai chicken burgers with homemade satay sauce

Thai chicken burgers
- 500 gram chicken mince
- 1/2 cup panko breadcrumbs
- 1 egg, beaten
- 2 spring onions, finely sliced
- 2 tablespoon Thai red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon peanut oil
- 4 ciabatta rolls, halved, toasted
- 1 cup mixed lettuce
- 2 tomatoes, sliced
- 1 carrot, peeled into ribbons
- grilled lime wedges to serve (see recipe tip)
Satay sauce
- 1/3 cup smooth peanut butter
- 1/4 cup sweet chilli sauce
- 2 tablespoon water
- 1 tablespoon soy sauce
- 2 tablespoon chopped, roasted, unsalted peanuts
Method
- 1In a large bowl, combine mince, breadcrumbs, egg, spring onions, curry paste and fish sauce. Shape into four even-sized flattened patties. Chill for 20 minutes.
- 2For the satay sauce: In a small microwaveable jug, combine peanut butter, sweet chilli sauce, water and soy sauce on high in 30-second bursts until smooth. Stir in peanuts and set aside.
- 3In a large frying pan, heat oil on medium. Cook patties for 3-4 minutes each side until well browned and cooked through. Drain on a paper towel.
- 4Top half of each roll with an even amount of lettuce leaves, a patty, tomato, carrot and sauce. Finish with roll top and serve with grilled lime.
Notes
- Grill lime wedges, flesh side down, on a hot char-grill pan for 1-2 minutes until grill marks appear.
