  • 1 cup mixed lettuce
  • 2 tomatoes, sliced
  • 1 carrot, peeled into ribbons
  • grilled lime wedges to serve (see recipe tip)
Satay sauce

  • 1/4 cup sweet chilli sauce
  • 2 tablespoon water
  • 1 tablespoon soy sauce
  • 2 tablespoon chopped, roasted, unsalted peanuts

Method

  • 1
In a large bowl, combine mince, breadcrumbs, egg, spring onions, curry paste and fish sauce. Shape into four even-sized flattened patties. Chill for 20 minutes.

In a large frying pan, heat oil on medium. Cook patties for 3-4 minutes each side until well browned and cooked through. Drain on a paper towel.
  • 4
Top half of each roll with an even amount of lettuce leaves, a patty, tomato, carrot and sauce. Finish with roll top and serve with grilled lime.

Notes

  • Grill lime wedges, flesh side down, on a hot char-grill pan for 1-2 minutes until grill marks appear.
