Thai basil chicken noodle stir-fry

Ingredients
Thai basil chicken noodle stir-fry
- 4 chicken thigh fillets, sliced
- 185 gram thai basil and mild chilli stir-fry paste
- 400 gram thick hokkien noodles, soaked in hot water
- 1 tablespoon sesame oil
- 1 small head broccoli, cut into florets
- 220 gram can water chestnuts, drained, quartered
- 1/4 cup shredded thai basil
- 1 tablespoon toasted sesame seeds
Method
Thai basil chicken noodle stir-fry
- 1In a bowl, combine chicken and paste. Marinate in fridge 15 minutes. Heat noodles according to packet directions. Drain and keep warm.
- 2Heat oil in a wok or frying pan on high. Stir-fry chicken in batches for 3-5 minutes, until browned.
- 3Return chicken to pan with broccoli. Stir-fry 3-5 minutes, until chicken is cooked through and broccoli is tender.
- 4Add noodles and water chestnuts. Stir-fry for another 2-3 minutes. Toss through basil and sesame seeds. Serve.
