Teriyaki chicken with soba noodle salad
  • 750 gram chicken thigh fillets
  • 1/2 cup teriyaki marinade
  • 1 tablespoon peanut oil
  • 270 gram packet soba noodles
  • 100 gram snow peas, thinly sliced
  • 1 orange, segmented
  • 2 green onions, thinly sliced, plus extra to serve
  • 1 teaspoon fresh grated ginger
  • toasted sesame seeds, to serve

    In a medium bowl, combine chicken and 1/3 cup marinade. Cover and chill for 2 hours or overnight.

    Heat oil in a large frying pan on medium. Cook chicken for 3-4 minutes each side, or until cooked through. Rest 5 minutes, then slice thickly.

    Meanwhile, cook noodles in a large saucepan of boiling salted water, following packet instructions. Drain well.

    Transfer noodles to a large bowl with snow peas, orange segments, onion, ginger and remaining marinade. Toss well to combine.

    Serve chicken on a bed of noodles, scattered with extra onion and sesame seeds.
