Tasty meatballs with finger-food salad

Lamb meatballs make the ideal lunchbox addition served alongside vege crudite and pita bread.

  • 250 gram lamb mince
  • 2 spring onions, finely sliced
  • 1 egg, whisked
  • 1 tablespoon barbecue sauce
To serve
  • pita pockets
  • cherry tomatoes, halved
  • celery and capsicum sticks
  • lettuce

Method

    Preheat oven to 180°C. Line an oven tray with foil.

    In a bowl, combine lamb, onion, egg and sauce. Season.

    Form mixture into walnut-sized balls. Arrange on tray. Spray with oil.

    Bake for 20-25 minutes, turning occasionally until entirely cooked through.

    Allow to cool. Store, chilled in an airtight container. Meatballs are delicious eaten warm or cold –
