Tandoori wraps with yoghurt dressing

These delicious tandoori wraps are made with authentic roti bread. With just 2 chicken breasts as the main ingredient, it's a budget meal with a difference!

Method

1.In a large bowl, combine tandoori paste and yoghurt. Add chicken, turning to coat in marinade. Chill, covered, for at least one hour (see tip).
2.In a bowl, combine salad leaves, capsicum and onion.
3.DRESSING: In a small bowl, combine yoghurt, cucumber and coriander.
4.Heat char-grill or barbecue on high. Char-grill chicken for 4-5 minutes each side until cooked. Slice thinly. Set aside and cover to keep warm.
5.Meanwhile, char-grill roti bread for 2 minutes on one side until pliable. Place roti on a board, grilled side down. Spread with yoghurt dressing. Top with an even amount of salad and sliced chicken.
6.Roll bread up. Serve with sweet mango chutney. Alternatively, serve chicken and salad on roti bread as an open sandwich, topped with yoghurt dressing (as shown).

makes 8 Most packets of roti contain 6 pieces, so wrap any remaining ones and freeze to use later. If time allows, marinate the chicken for several hours or overnight. You can use 500g of peeled green prawns instead of chicken for this recipe.
