Method

1.Preheat oven to 180°C. Place an oven tray in to heat up.
2.Line a tart tin with the pastry.
3.In a bowl, whisk the brown sugar and egg until pale and thickened.
4.Whisk in the sour cream, cream and vanilla. Spoon into the pastry case.
5.Peel the tamarillos using a serrated knife. Slice into 3-4 thick slices, then lay on top of the cream filling.
6.Bake for 20 minutes on the preheated tray until the custard is set and the pastry is golden brown.
7.Cool for 10 minutes before serving.
