Tabouli couscous with falafel

Aussies love this Middle Eastern vegetarian meal that we've made even tastier. Better still, it will be on the table in just 15 minutes!

Ingredients

Hummus dressing

Method

1.Place couscous in a large bowl. Pour over the combined boiling water, lemon juice and rind. Cover with plastic wrap. Stand for 5 minutes.
2.Fluff couscous with a fork. Stir through tomato, herbs and onion. Season to taste.
3.Hummus dressing: In a jug, combine hummus and yoghurt. Season to taste.
4.Serve couscous topped with falafel balls and dressing on flatbread.

Falafel balls are available at selected delicatessens and kebab shops. Or you can make them yourself from a packet mix.
