Ingredients
Method
1.Heat olive oil in a large frying pan on high. Add chicken and spices, and sauté for 5 minutes.
2.Stir in apricot nectar, chicken stock, apricots, beans and olives, and season to taste. Simmer for 5 minutes.
3.Spoon couscous onto plates, top with chicken and coriander. Serve.
