Method

1.Preheat oven to moderate, 180°C. Lightly grease and line a shallow baking dish with baking paper.
2.In a large bowl, combine mince, breadcrumbs, capsicum, onion and egg. Season and mix well. Mould into a 10cm x 20cm loaf shape. Top with pineapple slices. Place in baking dish. Bake for 30 minutes.
3.Drain juices. Brush meatloaf all over with sweet and sour sauce. Bake for 15-20 minutes until golden.
4.Cool in dish for 5 minutes, then unmould. Slice and serve with extra sauce, rice and salad leaves.
