Method

1.Place rice in a sieve. Wash under running water until it runs clear. Combine rice and water in a medium pan. Bring to boil. Reduce heat to low. Cook, covered, for 12-15 minutes. Remove from heat. Stand, covered, for 10 minutes.
2.Spread rice over a baking tray. Drizzle sushi seasoning evenly over rice. Turn rice with a spatula. Cool completely.
3.Place a nori sheet on a bamboo mat, shiny side down, with short side facing upwards.
4.Using wet fingers, gently press 1/4-cup rice all over sheet, leaving a 2cm strip at one end. Make a ridge along the middle of rice with finger. Top with salmon and avocado. Roll tightly using the bamboo mat.
5.Repeat with remaining sheets, rice and filling. Wrap in plastic wrap. Chill until firm. Cut each roll into 4 pieces. Serve with soy sauce.
