Super seed brittle
This deliciously crunchy snack is packed full of healthy, whole seeds to give you sustainable energy to stay fueled for the day ahead. They're also nut-free, so they make a great homemade treat for the kids' lunchbox.

Ingredients
Super seed brittle
- 2 cup (440g) caster sugar
- 1/2 cup (125ml) water
- 1/2 cup (110g) pepitas (pumpkin seeds), toasted
- 1/2 cup (75g) sunflower seeds, toasted
- 1 tablespoon sesame seeds, toasted
- 1 tablespoon black chia seeds
Method
Super seed brittle
- 1Line oven tray with baking paper.
- 2Combine sugar and the water in medium saucepan; stir over heat, without boiling, until sugar dissolves. Bring to the boil; boil, uncovered, without stirring, until golden brown. Allow bubbles to subside; add seeds.
- 3Pour mixture onto tray; leave to set at room temperature. Break brittle into pieces to serve.
Notes
Chia seeds come from a plant that is related to mint. They are source of fibre and omega-3 fats. You can find them in health food stores and good supermarkets.
