Super seed bowl with apple and yoghurt
Hit the ground running in the morning with our super seed breakfast bowls. The combination of seeds, dried berries, fruit and yoghurt means it's not only delicious, it's the nutritious kick you need.

Ingredients
- 2 medium green apples, cut into matchsticks
- 2 tbsp lemon juice
- 1/2 cup coconut water
- 100 g strawberries, thickly sliced
- 1/2 cup Greek-style yoghurt
- 2 tbsp raw honey
Super seed mix
- 2 tbsp sunflower seeds
- 2 tbsp pumpkin seeds
- 1 1/2 tbsp sesame seeds
- 1 1/2 tbsp poppy seeds
- 1 1/2 tbsp chia seeds
- 1 1/2 tbsp flaxseeds (also known as linseed)
- 2 tbsp currants
- 2 tbsp goji berries
Method
- 1To make the Super seed mix, stir sunflower and pumpkin seeds in a small frying pan over medium heat for 2 minutes or until lightly golden. Add sesame seeds, poppy seeds, chia seeds and flaxseeds, stirring for 30 seconds or until toasted. Remove from pan and cool. Stir in currants and goji berries. (Makes 1 cup.)
- 2Combine apple and juice in a medium bowl.
- 3Divide apple mixture and half the seed mix between two bowls, then add coconut water. Top with strawberries and yoghurt. Drizzle with honey and sprinkle with remaining seed mix.
Notes
Super seed mix can be made ahead. Store it in an airtight container or jar in the fridge for up to 3 months.
