Summer’s strawberries & oranges

This is the most refreshingly delicious hot weather dessert you could ever have. Late season strawberries are a favourite as they are more intensely sweet than the tart early varieties, but they cost more, so my ever-economical mum combines them with cut oranges to make them go further.

Method

1.In a lovely bowl, slice the strawberries.
2.Peel the oranges with a serrated knife, making sure to remove all the pith, then cut into bite-sized pieces. Do this over the bowl of strawberries so that no juice escapes, then add the extra orange juice.
3.Cover and leave to one side to allow the flavours to develop.
4.Serve with whipped cream or home-made crème fraîche.

Make your own crème fraîche – it’s so simple and cheap! In a clean jar, stir 2 tbsp plain yoghurt or buttermilk into about 1 cup cream, then stir and cover with a tea towel. Leave at room temperature for 8-24 hours, depending on how thick you like it. Within the day, the cream transforms to a thicker, tangier version of itself. Put in the fridge for 8 hours before serving – it will continue to thicken once it is chilled. It will keep for up to 2 weeks.
