Summer fruit punch

Whether you're looking for a cool refreshment at the beach, or the perfect tipple for a summer party, this recipe is it. Keep it alcoholic or swap the bubbles for soda water, depending on your mood.

  • 1 cup freeze-dried fruit (such as raspberries, plums and mandarin)
  • 1 lime, thinly peeled
  • 1 orange, thinly peeled
  • 4 slice fresh ginger
  • 2 star anise
  • 2 cinnamon stick
  • 2 litre bubbles of your choice
  • 1 litre fruit juice of your choice (cranberry, tropical, etc.)
  • ice, to serve

    Combine freeze-dried fruit, lime peel, orange peel, fresh ginger, star anise and cinnamon sticks in a large sealed jar.

    When ready to drink, fill jar with ice and top up with bubbles and fruit juice.


To make this punch kid-friendly, swap the bubbles for soda water.
