Method
1.Place beans and snow peas in a heat-proof bowl. Cover with boiling water. Set aside for 2 minutes until bright green and tender crisp. Drain and refresh under cold running water.
2.In a large frying pan, heat oil on high. Sauté shallot and garlic for 1 minute until aromatic.
3.For the dressing: In a jug, whisk all ingredients together. Season.
4.Combine beans, peas, shallot mixture, tomato and parsley. Add dressing. Sprinkle with almonds and sprouts.
Note
- Toast almonds in a dry frying pan over medium heat, tossing often until lightly golden.
