Strawberry neapolitan ice-cream sandwiches

Big scoops of Neapolitan ice-cream are sandwiched between chewy, golden chocolate chunk cookies with juicy strawberries and finished with a rich hazelnut chocolate drizzle. Highly decadent, this cheeky dessert is wonderful for adults and children alike.

Ingredients

Method

1.Spread flat side of each cookie with 2 teaspoons of the spread.
2.For each sandwich: place a cookie on serving plate, spread-side up. Top with 3 strawberry slices and 1 scoop of chocolate, strawberry or vanilla ice-cream. Top with 3 strawberry slices, then place second biscuit on top, spread-side clown.
3.Place extra spread and cream in a small heatproof bowl. Microwave on high in 20-second bursts, until melted and smooth. Drizzle sauce over ice-cream sandwiches. Serve at once.

You’ll need 2 x 240g packets of cookies for this recipe. Try mixed berries instead of just strawberries. You can use ice-cream of any flavour.
