Ingredients

Strawberry eton mess
  • 500 gram hulled, halved strawberries
  • 2 tablespoon icing sugar
  • 1 orange, zested, juiced to give 1/4 cup juice
  • 500 gram vanilla yoghurt
  • 1 cup custard
  • 100 gram packet, crumbled mini vanilla meringues
  • 2 tablespoon pistachio nuts, chopped

Method

    In a large saucepan, combine strawberries, sugar, zest and juice. Stir over medium heat, 2-3 minutes, until sugar dissolves and strawberries begin to soften. Remove from saucepan, cover and chill.

    Fold yoghurt and custard together. Gently swirl strawberry mixture and 3/4 meringue through.

    Spoon dessert into glasses or bowls. Serve topped with chopped nuts and remaining crushed meringue.
