Ingredients: 500 gram hulled, halved strawberries; 2 tablespoon icing sugar; 1 orange, zested, juiced to give 1/4 cup juice; 500 gram vanilla yoghurt; 1 cup custard; 100 gram packet, crumbled mini vanilla meringues; 2 tablespoon pistachio nuts, chopped

Ingredients

500 gram hulled, halved strawberries

2 tablespoon icing sugar

1 orange, zested, juiced to give 1/4 cup juice

500 gram vanilla yoghurt

1 cup custard

100 gram packet, crumbled mini vanilla meringues

2 tablespoon pistachio nuts, chopped

Method

1.In a large saucepan, combine strawberries, sugar, zest and juice. Stir over medium heat, 2-3 minutes, until sugar dissolves and strawberries begin to soften. Remove from saucepan, cover and chill.

2.Fold yoghurt and custard together. Gently swirl strawberry mixture and 3/4 meringue through.

3.Spoon dessert into glasses or bowls. Serve topped with chopped nuts and remaining crushed meringue.
