Strawberry and macadamia white choc blondies

Did you know brownies made with white chocolate are called blondies? Nici Wickes' recipe for these fudgy and dense treats are beautifully scented with strawberries. Heaven!

Method

1.Preheat oven to 180°C. Grease and line a 20cm square tin.
2.Cream the butter and brown sugar until well mixed and lighter in colour. Beat in the egg and vanilla.
3.Stir in the flour and salt, mixing until combined. Add the nuts and chocolate, mixing briefly. Finally, stir through the strawberry pieces. Spoon into the pan and smooth out.
4.Bake for 20-25 minutes or until set in the middle. Err on the side of undercooking rather than overcooking, as gooeyness is of value for this type of baking.
5.Cool on a rack before cutting.

This can also be made in a Swiss roll tin, only filling to three-quarters. Prevent the batter from spreading by folding up the baking paper to create a barrier. As the batter is quite stiff, this works a treat!
