  • 130 gram butter, melted
  • 1 cup brown sugar, firmly packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cup plain flour
  • 1/4 teaspoon salt
  • 1/2 cup macadamia nuts, roughly chopped, some left whole
  • 100 gram white chocolate, chopped roughly (or use choc buttons)
  • 1/2 cup strawberries, chopped

  • 1
Preheat oven to 180°C. Grease and line a 20cm square tin.
  • 2
Cream the butter and brown sugar until well mixed and lighter in colour. Beat in the egg and vanilla.
  • 3
Stir in the flour and salt, mixing until combined. Add the nuts and chocolate, mixing briefly. Finally, stir through the strawberry pieces. Spoon into the pan and smooth out.
  • 4
Bake for 20-25 minutes or until set in the middle. Err on the side of undercooking rather than overcooking, as gooeyness is of value for this type of baking.
  • 5
Cool on a rack before cutting.

This can also be made in a Swiss roll tin, only filling to three-quarters. Prevent the batter from spreading by folding up the baking paper to create a barrier. As the batter is quite stiff, this works a treat!
