  • 1/3 cup extra virgin olive oil
  • 2 tablespoon white balsamic vinegar
  • 1/2 teaspoon dijon mustard
Strawberry and blue cheese salad
  • 80 gram mesclun
  • 250 gram punnet strawberries, washed, halved
  • 4 prosciutto slices, pan-fried, broken into pieces
  • 4 ciabatta bread slices, baked, torn
  • 100 gram soft blue cheese, crumbled

    On a serving platter, combine mesclun, berries, prosciutto, bread and cheese.

    To make dressing, whisk all ingredients together in a jug. Season to taste. Drizzle over salad just before serving.


Bake the ciabatta bread in a hot oven, 200°C, 10-12 minutes, turning once, until golden brown.
