Method

1.In a wok or large frying pan, heat half oil. Add scallops and season with salt. Cook 30 seconds each side, then remove to plate.
2.Add remaining oil to wok. Stir-fry onion, garlic, ginger and chilli 30 seconds. Add vegetables and stir-fry 1 minute.
3.Mix in sauces and sugar and stir-fry 1-2 minutes, until bubbling. Return scallops to wok and stir-fry 30 seconds before serving.

Check your wok is hot enough to start cooking by looking for a shimmering pattern on the surface of the oil. And always reheat your wok between batches to prevent stewing.
