Method

1.Line 2 large baking trays with double layers of baking paper. Place ribs on prepared trays. Combine ketjap manis and sauces. Pour over ribs. Turn to coat. Cover with plastic food wrap. Chill for at least 2 hours to marinate.
2.Preheat oven to 200°C/180°C fan forced. Bake ribs for 50-55 minutes, turning and basting occasionally, until caramelised and cooked.
3.Cut ribs into smaller sections; transfer to a serving platter. Add carrot and celery to platter. Combine green onion and fried onions in a small bowl. Serve ribs sprinkled with onion mixture.

Ketjap manis is Indonesian sweet soy sauce. Fried onions are in the Asian food aisle.
