Sticky apricot & lime ribs
1.Place pork in a large saucepan with enough cold water to cover. Cover; bring to the boil. Reduce heat to low; skim away impurities from the surface. Simmer, covered, about 45 minutes. Drain.
2.Combine remaining ingredients in a large bowl, add pork; turn to coat. Cover; refrigerate 2 hours or overnight, turning occasionally.
3.Preheat oven to 200°C/400°F.
4.Place pork and marinade in a large baking-paper-lined dish; season. Roast about 1 hour, turning and brushing every 15 minutes with pan juices. Cut into individual ribs to serve. Accompany with lime wedges, if you like.
You will need about 2 limes for this recipe.
