Method

1.Place scallops, overlapping, in a steamer basket. Combine soy sauce, oyster sauce, sugar and ginger in a bowl. Drizzle over scallops. Chill, covered, 30 minutes.
2.Place steamer basket over a wok of gently simmering water and cover tightly with lid. Steam 3-5 minutes, until scallops are opaque and cooked to your liking. Serve immediately topped with sprigs of coriander.

Clean scallops with point of a sharp knife. If scallops in shell are unavailable, line a steamer basket with baking paper, arrange scallops on paper, drizzle with marinade and continue as directed.
