Sprite served over blackened coconut & pineapple rocks

These dark ice cubes add simple fresh flavour to lemonade and introduce a mysterious, slightly sinister, quality to your Day of the Dead gathering. Fill glasses with the black ice and top up with lemonade. Photography by Jani Shepherd / Gatherum Collectif.

Ingredients

Sprite served over blackened coconut & pineapple rocks
  • 1 1/2 cup sweet pineapple juice
  • 1 cup coconut water
  • lemonade, chilled (we used sprite zero)

Method

    In a jug combine the pineapple juice and coconut water.

    Add food colouring until you reach desired level of darkness. Pour into ice cube trays and freeze.

    Place 2-3 black ice cubes in each glass and fill with chilled lemonade.

Notes

Serve immediately and let your guests watch as the ice melts and the liquid transforms eerily before their eyes. For a grown-up version, add a little vodka.
