Method

1.Preheat the oven to 160°C. Line a 30cm x 20cm slice pan with baking paper.
2.Place the almonds in a bowl. Add the rice flour, sugar, baking powder and enough melted butter to combine. Press the mixture into the prepared slice pan.
3.Bake the base in the preheated oven for about 15 minutes, removing it from the oven before it starts to go golden
4.Combine the topping ingredients and pour the mixture over the partially cooked base. Use a spatula to smooth the topping evenly over the base.
5.Return the slice to the oven for 15-20 minutes until bubbles start to form. Do not allow the edges to brown too much. Remove the slice from the oven while the topping is still wobbly, it will set when chilled. Refrigerate overnight.
6.Stand a knife in hot water and cut the slice into squares, cleaning the knife after each cut. The topping is meant to be soft and moist.
