Method

Spooky inside out sushi

1.Spread hot rice onto a tray. Drizzle seasoning over, breaking up lumps. Fan and cut through rice with a spatula until almost cool.
2.Place a halved nori sheet on bamboo mat. Spread over 1/6th rice. Cover with a piece of plastic wrap. Carefully turn over onto bamboo mat so the nori is on top.
3.Arrange vegetables lengthways along nori, on edge closest to you. Use index fingers and thumbs to roll, pulling back mat and plastic as you go. Gently press down to shape and seal the roll. Wrap in plastic wrap and twist ends to seal. Repeat with remaining ingredients. Keep chilled until ready to serve.
4.Unwrap sushi and roll in seeds. Cut each roll into 8 pieces, wiping the knife with a damp cloth between each cut. Serve with soy sauce and wasabi.

Purchase black sesame seeds from Asian grocers. Use a sharp knife to cut sushi.
