Ingredients

Spinach, feta and pine nut salad
  • 50 gram baby spinach leaves
  • 1 cup loosely packed fresh mint leaves
  • 1 cup loosely packed fresh dill leaves
  • 80 gram soft feta cheese, crumbled
  • 1/2 cup (80g) pine nuts, roasted
Lemon dressing
  • 1 lemon (140g)
  • 1 tablespoon olive oil
  • 1 tablespoon oregano

    Combine spinach, mint and dill in medium bowl.

    To make lemon dressing, remove rind from lemon in long thin strips; place in small heatproof bowl. Add enough boiling water to cover rind; drain. Repeat process two more times. Remove remaining skin and pith from lemon. Segment flesh over small bowl to catch juice; coarsely chop flesh. Add well-drained rind and flesh to bowl with juice; add remaining ingredients, season to taste.

    Just before serving, add cheese, nuts and dressing; toss gently to combine.
