Spicy pear loaf
- 125 gram butter
- 1 cup brown sugar
- 1 teaspoon vanilla
- 3 eggs
- 2 cup flour
- 2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ground cloves
- 1/2 cup milk
- 3 firm pears, peeled, cored and chopped
Icing
- 1 1/2 cup icing sugar
- 2 tablespoon lemon juice
- 1 tablespoon boiling water
Method
Spicy pear loaf
- 1Preheat the oven to 160°C. Line a 24cm x 13cm loaf tin with baking paper.
- 2Cream the butter and sugar, then add vanilla and the eggs one at a time, beating well after each addition.
- 3Fold in the sieved flour, baking powder and spices, then the milk and finally the pears.
- 4Spoon mixture into the prepared loaf tin and bake for 50–60 minutes or until cooked. Cool on a wire rack, then ice or serve warm with lashings of butter.
- 5To make the icing, mix all ingredients together until smooth, then pour over the cooled loaf.
