Spicy Indian mango chutney

Ingredients

Spicy mango chutney
  • 5 (2kg) mangoes, peeled, coarsely chopped
  • 1 1/3 cup (200g) coarsely chopped dried peaches
  • 2 (340g) medium white onions, finely chopped
  • 2 cup (440g) sugar
  • 2 1/2 cup (625ml) cider vinegar
  • 6 clove garlic, finely chopped
  • 2 tablespoon finely grated fresh ginger
  • 1 teaspoon dried chilli flakes
  • 1 teaspoon coarse cooking salt

Method

Spicy mango chutney

    In a large saucepan, combine all ingredients over high heat, without boiling, until sugar dissolves. Bring to boil. Reduce heat; simmer, uncovered, stirring occasionally, for about 1 hour or until chutney is thick.

    Spoon hot chutney into hot sterilised jars; seal immediately. Label and date jars when cold.
