Method

1.Line a baking tray with baking paper or butter it lightly.
2.Combine the flour, nuts, sugar, cocoa, lemon zest and spices in a food processor.
3.Drop in the butter in smallish lumps and process until well combined, then add the egg yolk and the lemon juice and process to a firm paste.
4.Wrap in waxed paper and refrigerate for 30 minutes. Preheat oven to 180°C.
5.Roll dough out to 3mm thick and cut into fluted rounds. Cut the centres out of half the rounds using a small round or shaped cutter. Bake the biscuits (including the ‘holes’; kids love these mini biscuits, which can be sandwiched or left as they are) for 10-12 minutes until just beginning to brown.
6.Cool on a rack, sandwich in pairs (one solid, one with a hole) with jam and dust tops lightly with icing sugar.
