Spicy chorizo & green beans

This dish reminds me of the food you get in Portugal – hearty and spicy. Mind you, there it would be served with a double dose of carbs – rice and fried potatoes, no doubt! I make it a more complete and healthier meal by adding boiled eggs for a quick and tasty summer supper.

Mustard mayo

Method

Spicy chorizo & green beans

1.Fry the chorizo pieces in a frypan until they release a beautiful orange-coloured oil (from the paprika).
2.At the same time, either steam or simmer the beans in a few centimetres of water until just cooked. Drain well.
3.Throw the cooked beans into the frypan with the chorizo. Stir-fry for 30 seconds, then tumble onto a serving plate. Top with hard-boiled eggs.

Mustard mayo

4.Mix all the mustard mayo ingredients together, then drizzle over the dish.
