Ingredients

Method

1.Cut between bones of pork to make 3 racks of ribs. In a large bowl, combine barbecue sauce, tomato paste, Worcestershire sauce, sugar and cayenne pepper. Season to taste. Add ribs, tossing to coat in marinade.
2.Cover and chill to marinate for 1 hour (they can be chilled overnight if preferred).
3.Preheat a barbecue or char-grill pan to medium. Drain ribs, reserving marinade. Char-grill ribs for 8-10 minutes each side, basting with marinade until cooked through. Serve with wedges and salad.

Larger ribs may need to finish cooking in a moderate oven, 180°C.
