Method

1.Heat 1tbsp of oil in a deep frying pan or saucepan on high. Cook chicken in batches, 3 mins, until just browned. Remove from pan. Add cauliflower and sauté, 5-7 mins, until golden. Remove from pan.
2.Heat remaining oil in same pan on medium. Cook onion, stirring, 3 mins, until softened. Stir in cumin seeds and rice, cook, 2 mins, stirring, until rice is translucent. Stir in stock, peas and chicken. Season.
3.Top with cauliflower and bring to boil. Cover and reduce heat to low. Simmer, 15 mins, until liquid is absorbed and rice is cooked. Serve.
