Spiced lamb and couscous koftas

Method

1.Preheat oven to 200°C. Line a large oven tray with baking paper.
2.In a large bowl, combine the mince, couscous, onion, coriander, lemon, egg, garlic, chilli and coriander. Season.
3.Using clean, wet hands,shape 2 tablespoons of mixture into sausage shapes around each skewer. Place on a plate. Chill for 20 minutes.
4.For the salad, toss all the ingredients together in a medium bowl.
5.Heat the oil on high in a large frying pan. Cook the koftas in batches for 5 minutes, turning, until browned. Transfer to a tray. Bake for 20-25 minutes until cooked through. Serve with salad, pita bread, yoghurt and lemon wedges.
  • Soak the skewers in warm water for at least 20 minutes before use to help prevent scorching when cooking. – Serve with bought tzatzki or hummus for a change.
