Method

1.In a bowl, combine 500g steamed, mashed kumara (sweet potato), 1 tablespoon finely chopped coriander, 1 crushed garlic clove and 1 teaspoon ground cumin. Season to taste.
2.Working with 8 small flour tortillas, spread kumara mixture on 4. Crumble over 120g feta and top with a second tortilla.
3.Heat 2 tablespoons olive oil in a large frying pan on medium. Cook 2 quesadillas for 1 minute each side, until crisp. Transfer to a paper towel-lined plate. Repeat with remaining quesadillas. Cut into quarters. Serve with spinach salad.
