Spiced indian meatballs

Transport yourself to the streets of India with this meatball dish. With eggplant, beans and tomatoes covered in a curry paste you'll love every hot mouthful.

Ingredients

Method

1.Heat half oil in a large frying pan on medium. Brown meatballs 4-5 minutes, turning. Transfer to a plate.
2.Heat remaining oil in same pan on high. Saute onion 2-3 minutes, until tender. Add paste and cook 1-2 minutes, until fragrant.
3.Stir in eggplant and cook 3-4 minutes until tender. Add coconut milk and tomatoes. Cover and simmer 15-20 minutes.
4.Return meatballs to pan with beans. Simmer 4-5 minutes to heat through. Sprinkle with coriander. Serve with rice.

If you don’t have curry paste, use 2 tablespoons of madras curry powder.
