Ingredients
Spiced fish pitas
- 1/4 cup plain flour
- 1 tablespoon moroccan spice mix
- 500 gram boneless white fish fillets, chopped
- 2 tablespoon vegetable or olive oil
- 1 1/2 cup frozen peas
- 1/2 cup small mint leaves
- 4 small wholemeal pita breads
- 1/4 small iceberg lettuce, shredded
- 1/4 cup natural yoghurt
- lemon wedges, to serve
Method
Spiced fish pitas
- 1Combine flour and spice mix on a large plate. Add fish; turn to coat. Shake off excess.
- 2Heat oil in a large frying pan over moderately high heat. Add fish; cook and turn for 4 minutes or until lightly browned. Add peas; cook for 2 minutes more or until peas are heated and fish is cooked. Remove pan from heat. Stir in mint.
- 3Place pita bread on serving plates. Top with lettuce and yoghurt, then fish mixture. Serve with lemon wedges.
Notes
Use frozen crumbed fish fillets. Cooking time will vary.
