Ingredients

Spiced fish pitas
  • 1/4 cup plain flour
  • 1 tablespoon moroccan spice mix
  • 500 gram boneless white fish fillets, chopped
  • 2 tablespoon vegetable or olive oil
  • 1 1/2 cup frozen peas
  • 1/2 cup small mint leaves
  • 4 small wholemeal pita breads
  • 1/4 small iceberg lettuce, shredded
  • 1/4 cup natural yoghurt
  • lemon wedges, to serve

Method

Spiced fish pitas
  • 1
    Combine flour and spice mix on a large plate. Add fish; turn to coat. Shake off excess.

    Heat oil in a large frying pan over moderately high heat. Add fish; cook and turn for 4 minutes or until lightly browned. Add peas; cook for 2 minutes more or until peas are heated and fish is cooked. Remove pan from heat. Stir in mint.

    Place pita bread on serving plates. Top with lettuce and yoghurt, then fish mixture. Serve with lemon wedges.

Notes

Use frozen crumbed fish fillets. Cooking time will vary.
