Method

1.Preheat oven to 150ºC. Line two baking trays with baking paper.
2.Use an electric beater to beat egg whites until soft peaks form. Gradually add sugar and beat until granules dissolve – about 6-8 minutes – adding in the boiling water and the vinegar and beat until stiff.
3.Put heaped teaspoonfuls of the meringue mixture, evenly spaced, on the tray using up half the mixture. Gently stir in the cranberries and spice mix into the remaining meringue mixture and fill up second tray with these meringues. You’ll get between 10-15 of each.
4.Bake for 30 minutes at 150ºC, then turn the oven off and leave for a further hour.
5.Once cold, stack a mix of each, plain and spiced, in jars scattering more cranberries (or freeze-dried berries) for colour.
  • Makes 20 – 30 meringues. – Offer as gifts with serving suggestions such as Eton mess, meringue sandwiches with lemon curd or drizzled in raspberry sauce with ice cream. – Scrawl a festive message on the jar.
