Spiced carrot and honey couscous

  • 2 tablespoon extra-virgin olive oil
  • 2 tablespoon lemon juice
  • 2 teaspoon honey
  • 1 teaspoon ground cumin

  • 1 cup couscous
  • 2 carrots sliced into strips
  • 1 chopped lebanese cucumber
  • 1/2 cup mint leaves plus extra, to serve
  • 1/4 cup currants
  • 4 pappadums
  • 4 hard-boiled, quartered eggs

    Prepare couscous following packet instructions. Set aside.

    To make the dressing: In a small jug, whisk all ingredients together. Season to taste.

    Fluff couscous with a fork. Add carrot, cucumber, mint, currants and half dressing, tossing to coat.

    Place pappadums in a single layer on paper towel. Spray with oil. Microwave on high (100 percent power) 1 minute, until puffed and lightly golden.

    Top couscous with egg quarters and extra mint leaves. Serve with pappadums and remaining dressing.
