Method

1.Preheat oven to moderate, 180°C. Lightly grease a 10 x 20cm loaf pan.
2.In a bowl, using an electric mixer, beat butter and sugar together until creamy. Add honey and vanilla.
3.Add eggs, one at time, beating well after each addition. Lightly fold in flour alternately with milk, then fold in chopped apple.
4.Pour mixture into pan and top with half the apple slices. Bake for 30 minutes until cooked when tested with a skewer. Stand in pan for 10 minutes, before transferring to a wire rack.
5.In a small saucepan, stir sugar and water on low until sugar dissolves. Increase heat to high and boil, brushing down the sides of the pan with a wet brush. Simmer until golden. Add apple slices and sprinkle with mixed spice. Cook for 2 minutes, turning. Cool, then arrange over top of cake.
  • This is best eaten on the day it’s made but freezes well.
