Ingredients

Method

1.Spray a large wok with oil. Heat over moderate heat. Add egg: tilt to cover base and sides. Cook for 1 minute or until set underneath. Fold in half; cook for 2 minutes. Transfer to a cutting board and slice.
2.Add oil to wok; swirl to coat base and side. Stir-fry onion and capsicum for 1 minute. Add rice, chicken, prawns; stir-fry for 2 minutes.
3.Add half of the egg, carrot, soy sauce, garlic and ginger; stir-fry for 1 minute more or until hot. Remove from heat; add snow peas and half the sprouts; toss to combine. Serve topped with remaining egg and the sprouts.

For authenticity, add barbecued pork.
