Spanish-style potato tortilla with spiced tomato sauce
Turn that party into a fiesta with this Spanish-style potato tortilla recipe! Cut into wedges and serve alongside homemade spiced tomato sauce for a crowd-pleasing snack or tasty lunch

Ingredients
- 2 tablespoon olive oil
- 500 gram thinly sliced baby new potatoes
- 1 thinly sliced small red onion
- 4 eggs
- 400 gram can diced tomatoes
- 1 crushed garlic clove
- 1 chopped long red chilli
- 1/2 teaspoon cayenne pepper
- micro herbs, to serve (optional)
Method
- 1In a 20cm nonstick frying pan, heat olive oil on medium.
- 2Cook potatoes and red onion for 8-10 minutes, turning occasionally, until potatoes are tender.
- 3Reduce heat to low. Preheat grill to medium.
- 4In a bowl, whisk eggs and season. Pour over potatoes, moving them around gently to fill the pan evenly. Cook for 5-6 minutes until set underneath and around the sides.
- 5Wrap a tea towel around the handle of frying pan. Place pan under grill and cook for 5-6 minutes until firm.
- 6Cool for 5 minutes, then turn out on to a plate.
- 7To make tomato sauce, in a small saucepan, heat tomatoes, garlic, red chilli and cayenne pepper, stirring. Season to taste.
- 8Sprinkle tortilla with micro herbs. Serve in wedges with tomato sauce.
Notes
- Add some sliced salami or mushrooms with the potato and onion, if desired.
