1.In a large frying pan, heat oil on medium. Saute onion 3-4 minutes, until tender. Add chorizo and fry 4-5 minutes, until crisp.
2.Stir in tomato and Tabasco. Season to taste. Simmer 3-4 minutes, until sauce thickens slightly.
3.Using the back of a spoon, make 4 indents in the sauce. Carefully break an egg into each indent. Reduce heat to low. Cook, covered, 5-8 minutes, until egg is set and cooked to your liking.
4.Top with green onions and serve with crusty bread or toast.
Spanish eggs can also be baked in the oven.
