Spanish eggs

Ingredients

Spanish eggs
  • 1 tablespoon oil
  • 1 red onion, thinly sliced
  • 1 chorizo, halved length ways, chopped
  • 1 400 gram can diced tomato
  • few drops tabasco sauce
  • 4 eggs
  • 2 green onions, sliced
  • crusty bread, to serve

Method

    In a large frying pan, heat oil on medium. Saute onion 3-4 minutes, until tender. Add chorizo and fry 4-5 minutes, until crisp.

    Stir in tomato and Tabasco. Season to taste. Simmer 3-4 minutes, until sauce thickens slightly.

    Using the back of a spoon, make 4 indents in the sauce. Carefully break an egg into each indent. Reduce heat to low. Cook, covered, 5-8 minutes, until egg is set and cooked to your liking.

    Top with green onions and serve with crusty bread or toast.

Notes

Spanish eggs can also be baked in the oven.
