Ingredients
Spaghetti with homemade pesto
- 2 clove garlic, chopped
- 2 bunch fresh basil
- 1/2 cup pine nuts, toasted lightly
- 1 cup grated parmesan cheese
- 1 cup olive oil
- 1 pinch sea salt
- 500 gram spaghetti
Method
Spaghetti with homemade pesto
- 1Pulse garlic, basil leaves and stems (keeping aside a few leaves) in blender or food processor until chopped finely.
- 2Add pine nuts and parmesan and pulse, drizzling in a continuous stream of olive oil until mixture forms a smooth paste. Season with salt.
- 3Cook spaghetti in saucepan of boiling salted water according to packet instructions. Drain.
- 4Toss spaghetti with a few tablespoons of pesto. Serve with scattering of basil leaves and parmesan shavings.
