Spaghetti with homemade pesto
  • 2 clove garlic, chopped
  • 2 bunch fresh basil
  • 1/2 cup pine nuts, toasted lightly
  • 1 cup grated parmesan cheese
  • 1 cup olive oil
  • 1 pinch sea salt
  • 500 gram spaghetti

    Pulse garlic, basil leaves and stems (keeping aside a few leaves) in blender or food processor until chopped finely.

    Add pine nuts and parmesan and pulse, drizzling in a continuous stream of olive oil until mixture forms a smooth paste. Season with salt.

    Cook spaghetti in saucepan of boiling salted water according to packet instructions. Drain.

    Toss spaghetti with a few tablespoons of pesto. Serve with scattering of basil leaves and parmesan shavings.
