Ingredients

Method

1.Lightly spray a frying pan with cooking oil spray and heat on medium. Cook onion and garlic for 5 minutes, stirring, until soft. Add carrot and celery and cook for another 5 minutes.
2.Increase heat to high, add mince and cook for 5 minutes, stirring to break up any lumps, until browned. Add tomato, parsley, oregano and 1/2 cup water. Simmer, stirring occasionally, for 25 minutes.
3.Meanwhile, cook spaghetti in a large saucepan of boiling, salted water according to packet directions. Drain. Top spaghetti with bolognese sauce, sprinkle with parmesan and serve.

Choose lean or extra lean mince – the redder the mince, the leaner it’s likely to be. You could also buy blade steak, trim the fat and chop it finely.
