Spaghetti Bolognese

1.In a large, heavy-based saucepan, heat oil on high. Sauté onion, celery, carrot, pancetta and garlic for 3 minutes until tender.
2.Add mince and cook for 4 minutes, breaking up lumps. Stir in tomato paste and cook for 1 minute.
3.Mix purée, diced tomatoes, wine, bay leaves and dried oregano through mince mixture. Bring to the boil. Reduce heat to medium and simmer for 20 minutes until thickened, then season.
4.Stir parsley through, then serve with cooked spaghetti, parmesan and bread.
