Soft-boiled eggs with herb soldiers
  • 4 eggs
  • 2 tablespoon margarine or butter
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon finely chopped oregano
  • 4 slices wholemeal bread, toasted

Method

Soft-boiled eggs with herb soldiers

    Place eggs in a saucepan of cold water. Bring to boil on high heat. Reduce heat to medium and simmer eggs 3 minutes.

    In a bowl, combine margarine parsley and oregano. Spread over toast and cut into soldiers. Cut tops off eggs and serve with soldiers for dipping.
