Method
1.Make dressing: While the walnuts are still hot from being roasted, combine dressing ingredients in a screw-top jar, shake to combine; season to taste.
2.Carefully, combine all ingredients in a large bowl, drizzle with dressing. Serve with crusty bread if you like.
You can use pear and parmesan instead of apple and pecorino in this salad, if you wish. Remove the meat from the fish with your hands for best results. Use a mandoline for thinly sliced apple pieces.
