Method

1.Blanch snow peas in boiling water for 30 seconds, until just tender. Drain and rinse immediately in cold water. Drain again.
2.Combine ginger and balsamic dressing in a small bowl, Gradually whisk in oil and season to taste.
3.Combine melon slices, snow peas, shredded chicken and ginger dressing. To serve, place salad greens in serving bowls and top with the chicken and melon mixture.

The luscious flavour of mango also teams well with smoked chicken. Simply replace melons with 1 sliced mango.
