Smoked chicken, potato and asparagus salad

This smoked chicken salad is seriously delicious. It's a meal in itself with baby potatoes, green beans and asparagus tossed in a tangy mustard dressing. Serve for a criminally tasty lunch or dinner

Method

1.Bring saucepan of water to boil, add potatoes and salt and simmer for 20 minutes. Add beans after 15 minutes, and asparagus after 18 minutes.
2.Meanwhile, shred smoked chicken into bite-size pieces.
3.To make dressing, whisk mustard, honey, vinegar, olive oil and parsley until thickened. Season with salt and pepper.
4.Drain vegetables and cut potatoes in half. Toss vegetables in dressing. Add chicken. Drizzle with any remaining dressing and serve.

You can find smoked chickens in the deli section of the supermarket. Or, if you prefer, use smoked trout fillets or sliced smoked salmon. If you don’t have sherry vinegar, try using red wine vinegar or apple cider vinegar.
